Snowy Saturday

Work has been quite stressful the past two-days, which held me back from my daily updates – not that I have many loyal readers 🙂 . But below are a few snapshots of meals yesterday – all taken with the cell phone due to lurky coworkers.


(1) Breakfast: Another filling parfait of 3/4 cup fat-free vanilla yogurt, 1/2 cup frozen blueberries and 1/2 cup frozen strawberries, and 3/4 cup Kashi Heart to Heart.

(2) Lunch: Small side salad with balsamic vinaigrette

(3) Lunch: La Tortilla Factory Wrap with Tofetti Lemon & Garlic Tofu  with 1/2-cup fresh spinach and 2 tablespoons sundried tomato & basil hummus. Delicious and my new addiction!

I probably snacked on 5 pieces of chocolate throughout the day at work and at home.  I didn’t hit the gym yesterday because I think I injured my knee (or re-strained) on Thursday when I ran, so I took a break.  I think today I may do some Wii Fit yoga to strech out that leg.

For dinner last night I had a craving for broccoli cheddar soup, besides D has been sick and I thought he’d appreciate something home made.  I grabbed a recipe from the, Emeril’s Broccoli and Cheese Soup (sans croutons). The only subs I made were subbing vegetable broth and using whole milk for heavy cream and using 2-cups of mild shredded cheddar.

I cooked up the soup and even pureed it in my blender – which really did the trick!

This soup was absolutely fantastic! It was very filling and so savory, I couldn’t believe I was capable of such restaurnt quality soup! *VEGANS: if you follow the recipe and stop after pureeing the broccoli (and do not add in the cheese and milk) the soup still tastes fantastic.  Just an FYI!


img_01454This morning I woke up with the prospects of snow in my future – which meant I needed to get moving asap if I wanted to run to the food store.  I had went yesterday to buy soup ingredients,  lettuce, tomatoes, bananas, and strawberries along with some more yogurt and cereal.  Today I was inspired by some blog reading and wanted to pick up a few more key items!

I quickly made a parfait (not pictured) including: 3/4 cup fat-free vanilla yogurt, 3/4 cups Special-K Vanilla Almond Cereal, 1/2 cup frozen blueberries, and 1/2 medium banana.  Absolutely filling and delicious – this cereal really did the taste trick!

I did VERY well at my new favorite psuedo-local foodery:


Finds include: original and southwest Sunshine Burgers, Flax Seed, Peanut Butter & Company White Chocolate Dream Peanut Butter, Almond Butter, Amy’s Mild Chili with Vegetables, La Tortilla Factory Low Carb, and more Tofettes Lemon Garlic Tofu!


As I said previously: this is my new obsession!

Of course after a trip to the grocery store and a scary drive through the blizzardy snow – I was starving!  I made D some lunch and then got to mine.  I wrapped up a chopped Sunshine Original Burger in a Low Carb wrap with 2 tablespoons tomato&basil hummus and 1 tablespoon of shredded melted mozzarella cheese.  ABSOLUTELY DELICIOUS and SO satisfying!! I was actually disappointed to have eaten it so quickly, but am anxious for returning to this meal.  A little bit of spinach would have really rounded things out!

Right now D is napping, so I think I am going to have a snack – then hit the Wii Fit.  Later I am going to make coockies & cream cupcakes and try my first attempt at marinating and steaming Tempeh.
