Siete de Mayo: The evolution of the vegan taco.

It seems pretty obvious that I’m in severe mourning of missing out on the coolest celebration of the year.  In an earnest attempt to regain some of that gusto (mucho), I thought tacos were the dinner of choice in taste and simplicity to achieve my post cinco de mayo goal.

I went against my usual whole grain (get it?), and actually bought fat-free corn tortillas which completely made the meal and I encourage everyone whose gone whole-grain to give it a go at least once! I started off with 1-serving of  Gimme Lean Lean Beef. *Side note: I have always been a 100% Morningstar Crumbles person.  As I’ve changed to a more vegan diet, I’ve been forced to re-try some lesser approved (by myself) fake meat alternatives. So far the Boca equivalent has been pretty good in Italian dishes as well.

Anyhow, I browned the grounds in some misted olive oil and added a tablespoon of Ortega Taco Seasoning. I added a bunch of veggies and threw it all a tortilla.  Feast your eyes on all it’s pre-topping glory:

With some awesomely fresh salsa fresca!

And half a serving of cheddar Daiya!

Let me curtail my rambling, and share what two servings of my taco entail:

  • 2 corn tortillas
  • 1 serving of meatless grounds
  • 1/2 cup frozen “Latino Blend” vegetables (black beans, corn kernals, diced pepper & onions)
  • 1/4 cup frozen pepper strips
  • 1/4 cup frozen chopped broccoli
  • 4 tablespoons fresh salsa
  • 1/4 cup cheddar Daiya

This was so super delicious!  I bought a lot of ingredients and will be using this meal as my go-to lunch for the next few day (happily).  One serving (which is what I downed for dinner) was about 250 calories so a little something more wouldn’t hurt. But it’s vegan and delicious! Hooray!

I’ve sort of been in a workout slump after my 20-super days of yoga.  I hope to get back on track with that tomorrow – but what I really hope to do is sleep in past 7 a.m., finish painting our bedroom, and doing a dry-run of some bridal shower cupcakes (my first *real* gig) that I’m baking/decorating next weekend.
